The choux-like pastry of churros consists of eggs, and I think that's what makes churros what they are. I don't think you can really use something else without deviating from the very core of what churros is. Perhaps you are looking for beignet or donuts instead of churros? I assume that commercialized churros you can buy aren't as egg-y because they add more flour instead of eggs, since that is cheaper.

I just wanted to add that real Spanish churros are made without eggs. Just flour, boiling water and a pinch of salt. They are deep fried in olive oil and in some parts of Spain they're coated with sugar.

I went to a restaurant that also served it with a scoop of homemade vanilla bean ice cream, and a bit of rose pashmak (Persian fairy floss) on the side. YUM-O!

Sandy's last blog post..goodbye non-existant paycheques!

These look lovely! In Australia (where I am, funnily enough) we have an excellent chain Spanish chocolate store that sells churros with chocolate. To be honest, I have never had them any other way.

I will have to try making my own now, because homemade is always better!

You make the churros look so delicious. They remind me of when I went to Mexico. Even though you don't like them, I have a sweet spot for the ones dripping with the delicious cinnamon and sugar.
