I did a search and it turns out you can.  David Lebovitz mentioned &lt;a href=&quot;http://www.davidlebovitz.com/archives/2007/07/tips_for_making_1.html&quot; rel=&quot;nofollow&quot;&gt;here&lt;/a&gt; that you can use 3/4 cup honey to replace 1 cup of sugar. And yes, it will impart a different flavor than sugar so that is something to consider if you are picky about the end taste.
