I could use a bowl of this right now:

It shifts from cold to hot here in Vancouver. “Would you like the cold for breakfast? Sweltering heat for lunch? No problem!” That kind of thing.
I made this a couple of months ago when Dan and I found some super sweet corn from Whole Foods. I think I even cooked this on a hot day in Arizona. Whether it’s a hot day, or cold day…this is good. I love corn soup! It’s basically just chopped onions sauteed with chicken, fresh crushed pepper and salt. Then fresh sweet corn and spinach leaves added right after you turn off the heat. Easy-peasy!
In Manila, our helpers used to cook this at my request. Instead of chicken chicken bits, they actually shred the chicken. They didn’t use spinach leaves, but some slightly bitter leaves (I think they were chili plant leaves). And it was a nice contrast to the sweet corn. It was delicious. I could eat it for days!
I have a bag of leeks and potatoes here waiting to be made into potato leek soup tonight. That’s another easy and tasty soup to make.
Now that it’s starting to cool up, I’m ready to make more soup! Do you have any (easy) soup recipes? Let me know!

1This recipe sounds wonderful! My daughter and I were grocery shopping last night and she said she would love to find a yummy recipe for corn soup. This one sounds absolutely perfect, not to mention easy! Thanks so much for sharing ;-)

2I didn’t know that you’re a Filipina…Not until I saw the corn soup, but of course there is this thing that tells me that, maybe some other nationalities have that kind of corn soup and then you mentioned Manila :p

3I’m not much of a soup person, but I have made two soups– Minestrone and Squash. I didn’t think they were that easy to make! (Or maybe I was just impatient and don’t have a stick blender, hee.)
I love crab and corn soup. Shredded chicken and corn is also up there :)

Manilenya — Oh ya! 100% Haha. Does your dad use dahon ng sili?
Manggy — I haven’t made either. I’d love to try roasted squash sometime, although I haven’t eat squash in over a year at least. Yumm…crab and corn!

6Just wanted to let you know that we made this soup yesterday and it is AMAZING!! Super easy to fix and wonderfully delicious. My daughter is happy to have a corn soup recipe and it is easy enough for her to make on her own. Since she is moving out soon, I’m happy to know there is at least one thing she can cook, LOL! Thanks again for sharing this yummy soup recipe!

7I love eating corn soup too! I eat it even on a hot day but I especially love eating soup when it’s raining outside and I’m at home. When I was still living with my parents, my mother always love to make corn and chicken soup in the afternoon after we had our nap. I’m a soup person and I love trying different kinds of soup and your recipe sounds yummy…I’m going to try this at home. Thanks for sharing!

8omg…this brings so many memories of of my childhood in the Philippines. I am from the Tarlac province and we call this dish “suam”. I am going to try and see if I can prepare it here in California using the type of corn we have.
