So what do you do after the holidays and you’re left with more ham than you can stomach eating for dinner?

Don’t throw it. Think of the hungry children of Somalia! At least that’s what my parents used to say. But really, it’s good food and yes, the taste could get a bit tiring, right?
In the Philippines, I just love having Pineapple Ham for Christmas or New Year. The one that I got from the store here was Brown Sugar Glazed. I find it too salty and made me miss what I grew up with. I was going to prepare the whole thing with pineapple for New Year but I just didn’t have time. To make up for it, I did that to the leftovers instead. I used crushed pineapple for the hint of pineapple without the big chunks of flavor from the usual sliced pineapple, ala Hawaiian style, although you can certainly use whatever pineapple you prefer or have available.
I just put olive oil and 1/4 cup of pineapple in the pan in medium heat:

Added 1 tablespoon of brown sugar:

Heat for a couple of minutes until the sugar starts to dissolve:

Then add ham slices either one big slice at a time:

Or if you have the ‘scraps’ of ham near the bone, you can put them all in the pan….nothing glamorous about it:

And enjoy your juicy, tasty, “revived” ham:

It’s special the second time around. :) It’s so yummy eating with plain or fried rice!
Here are other things you can do with leftover ham:
- cut/diced to flavor chow mein
- fried to flavor veggies such as green beans
- diced to flavor soups
- cut in strips to wrap cubes of cheese for appetizer
- sandwiches, of course
- shredded to use as a topping for congee

Oh! Oh! This reminds me of when I was in college. During my thesis year I had to stay behind more often, and each time there was a Hawaiian Ham Steak at the cafeteria, I’d order it! Instant Christmas. Pineapple and ham is such a great way to go!

This looks a tasty way to go! We used the rest of our meats up in various burritos on our camping trip. Some of our most ‘inventive’ cooking happens then :)
Mm…burritos. Good choice! I know, eh, you get to be inventive when you have leftovers. If you care enough to save them, that is. :)
i love to use leftover chicken in risotto, and i bet it would work for a lot of other leftover meats! anything with a slow, very moist cooking method is probably great… gah, now i’m hungry again!

Forget turkey and chicken…it’s all about the ham salad. Either diced or shredded. It’s heaven on a buttery cracker!
But sometimes, it’s nice just to keep it simple and throw a few slices of sweet ham on white bread with mayo. You’re talking good eats now.

We just put pineapple jam straight from the bottle on top of precooked ham then off to the microwave it goes.
Leftover ham can also be combined with shrimp to make something like camaron rebosado with twist.
Lordy! Now I wish I was able to save the 4 to 5 pounds of leftover ham from Christmas I threw away. Was too busy over holiday weekend I forgot to move it to the freezer and it spoiled in the refrigerator! But I am definitely trying this recipe of yours…can’t wait to enjoy it with garlic fried rice and eggs and tomatoes and..sarap!

i dice it up and add it to my augrating potaotoes or cheesy potatoes i also use spam the same way.
