		<description>Hey, just saw this post.  I&#039;ve made gluten-free puffs by substituting an equal portion of brown rice flour or rice flour for the AP flour.  It essentially comes out the same as the original, (as with all GF recipes, watch how it browns).

I think it might have to do with how much dough I piped out. I think yours look perfect! One question - I thought choux pastry dough was always a 1 to 1 ratio for liquid to flour. This looks like 1 cup liquid to 3/4 cup flour? Thanks!</description>
