Joy, cinnamon rolls again?!Yes, yes, I hear you. Haha. I’m sorry, but I just had to! I feel the need to share great discoveries when I find them. I know I’ve talked about cinnamon rolls for twodays but can you blame me for revisiting it now that I think I’ve found the Ultimate Cinnamon Rolls ?! They are incredibly soft, fluffy, chewy, with just the right amount of sweetness and creaminess. It’s criminal to not share it!
When I posted about my dough failure a couple of weeks ago, Elle (who’s a total sweetheart) offered to give her friend’s mom’s recipe for caramel cinnamon rolls with a dough that hasn’t failed her. No kidding. The first rise of the dough made my heart skip beats, and even moreso the second one:

I tweaked the cinnamon filling with more sugar and cinnamon, skipped the nuts, and used less caramel because I still wanted to top it with cream cheese glaze. Here it is right out of the oven and pan:
I wish I had a better picture or a photo of it with cream cheese glaze, but I was so excited that I dug right in and said to hell with photos! Time stopped with my first bite as it melted in my mouth. Ghee-Oh-Oh-Dee-licious. Need I say more? YOU HAVE TO TRY THIS NOW. It should be on everyone’s Things To Eat Before I Die list.
If you’re apprehensive about baking, making rolls, or attempting this, please…shove all these demons aside. Let me assure you that I’m no baker and I’ve had more flops with dough than I want to admit, but this one won’t disappoint. Elle calls the dough “forgiving”. I call it magical. These cinnamon rolls will make you feel like they were meant to be made and enjoyed to your heart’s content.
Things are busy here as it’s tax season, and with mommy and daddy filing their taxes for personal and their respective businesses, posting is a wee bit slower than usual. They’ve also been going out to see friends, which is always a good thing. The cocoa brownies weren’t posted as anticipated– our sincere apologies for those who are waiting.

Over the weekend, Joy and I had our share of visiting friends. When I was waiting for her at the local outlet mall, I decided to pick up a digital kitchen scale. If it were not for Alton Brown and his several episodes about weights and volume and the flour test, I would have been none the wiser to the value of this contraption. My brother-in-Law’s brother uses his scale to measure out his meal portions and he says he’s sticking to it. So I picked one up and then I realized what the first meal prepared with this scale would be. Breakfast.

The weekends mark the few days in a week we get to sit down together to eat breakfast. We rarely go out to have Breakfast of Champions [i.e. McDonald's] because it feels so much better to have homemade breakfast.
Yesterday, Dan prepared this elaborate brunch of waffles, bacon, scrambled eggs, and hot chocolate:
The white thing in a jar with teaspoon is freshly whipped cream. The carafe contains freshly made hot chocolate, and the waffle behind it is what I’m devouring right now as I type this. There’s a jar of maple syrup, and beside that is the heavenly tub of my all-time favorite butter that isn’t really butter: Earth BalanceWhipped Buttery Spread.
Dan prepared everything, well except for the whipped cream, my contribution. I, on the other hand, took pictures. If staring out food pictures is right up your alley, feast on the pictures on the pictobrowser. Don’t let us make you feel jealous. We really were thinking of you during this delightful meal. ;-) We lit the fireplace, too!
After lounging for an eternity, we finally cleaned our apartment and took down and boxed up our holiday decorations. For shame! Haha. This is what I call ending the past week, and beginning a new one, right.
Thursday night was an interesting night for me. I did not feel like cooking too much and really did not feel like getting something from a local fast food place. Joy suggested I make an omelette. So I did.
But I have never made an omelette before, so I hit up good old Google for advice: WikiHow for the perfect omelette. Please follow along with feasting eyes.
